Shakshuka Breakfast Skillet

I’ve been planning on making this dish for some time, and the day that I spontaneously decided to make it, I was limited on ingredients. I did not have any peppers or fresh herbs, however, throwing together these ingredients led to a pretty delicious breakfast. There’s so many ways you can make this dish, but this is mine. I added some toast and some breakfast potatoes because why not? 

           

        
Here's what you'll need:
                       
* 2 eggs
* 1 tbsp olive oil
* 2 tbsp @becelca vegan butter
* 1/2 can peeled tomatoes
* 2 peeled yellow potatoes
* 1 medium onion, chopped
* 2 cloves of garlic, minced
* garlic powder, dried basil, oregano, parsley (sauce spices)
* paprika, garlic powder, parsley (potato spices)
* Salt to taste

Instructions:
              
~Step 1: Place a pan on stove at medium heat and add olive oil to the pan. Once heated up, add your onions and garlic and sauté until translucent.
~Step 2: Add peeled tomatoes to a bowl before adding to the pan, and mash them with a fork to break them down. Then add to your pan on medium-low heat, along with your spices and mix together. Cook for about 8-10 minutes or until the sauce thickens.
~Step 3: Wash, peel and chop up potatoes and add them to another pan with some @becelca vegan butter. Add in your spices, mix together, and cover with a lid to cook for 8-10 minutes. Make sure you’re mixing them every couple minutes.
~Step 4: Once the sauce is done, make two holes to add your eggs, and cover with a lid so they cook all the way through.
~Step 5: Don’t forget to toast your @queenstreetbakery buns and add your vegan butter.
~Step 6: Once everything is done, top off your eggs with some salt and dried or fresh parsley. Feel free to add your potatoes and toast to the pan. Enjoy!
