I cannot get enough of this gorgeous sun-dried tomato pasta made from butternut squash. I can’t express more how surprised I was by how amazingly delicious this recipe was. I even said to my dad that this has to be the best pasta I’ve ever made, and I’ve made A LOT of pasta in my life. The creaminess of the sauce compliments the texture of the gnocchi so perfectly that I had to fill my plate with seconds. Unfortunately, I did not have spinach to add, however if you do I would definitely recommend adding it as it will give that extra flavour and of course that beautiful green colour.
