  • 1 package of pre-rolled Mimi Foods gluten-free pizza dough (2 doughs)
  • 1 tablespoon of vegan butter
  • Caputo gluten-free flour
  • Vegetable oil for frying
  • Powdered sugar, for dusting
  • Honey, for drizzling (optional)

 

INSTRUCTIONS

  1. Start with the pre-rolled Mimi Foods gluten-free pizza dough. To make it even fluffier, add 1 tbsp of room temperature vegan butter add it to one side of the dough. 
  2. Fold the dough in half and then fold it in half again, creating layers of buttery goodness. This step will enhance the texture and flavour of the beignets.
  3. Roll out the dough into a rectangular shape, ensuring it is about 1/4-inch thick. As you're rolling out the dough with a rolling pin, you may have sections that are sticky because of the vegan butter. Have some gluten-free flour handy so that you can add a sprinkle or two and then continue integrating the butter into the dough. The flour will stop the dough from sticking to your surface and rolling pin.
  4. Using a pizza cutter, slice the dough into six equal sections, creating individual pieces for frying.
  5. In a deep saucepan or a deep-fryer, heat vegetable oil over medium heat until it reaches a temperature of 350°F (175°C).
  6. Carefully drop each piece of dough into the hot oil, making sure not to overcrowd the pan. Fry the beignets for approximately 2-3 minutes per side or until they turn golden brown and puffed up.
