Mozzarella & Parmesan Prosciutto Bites

With the super bowl right around the corner, you're going to need all the snack ideas you can get. This tasty appetizer is so easy to make and one that you will definitely enjoy. It's made up of a combination of 3 of my favourite things; pizza dough, prosciutto and cheese. These cheesy bites are gluten-free, dairy-free and 100% delicious.

To create these salty snacks, I used Mimi Foods gluten-free sheeted pizza dough which comes already rolled out and ready to cut. I find that it's the easiest dough to use when making any kind of pizza, dessert or snack. You can check out my page to see what else I've made with their dough. 

NOTES

  • Dough: The dough for this recipe is probably the most important part. I used Mimi Foods gluten-free sheeted pizza dough and cut it up into strips. Make sure not to add too much topping to the strips because you need enough dough to fold it in half. You can use my video on instagram as a guide.
  • As always, you can use your choice of dairy-free, lactose-free or vegan mozzarella or cream cheese. I decided to use Farm Boy's dairy-free plain cream cheese and lactose-free mozzarella cheese.

PARMESAN PROSCIUTTO BITES

These snack bites are the perfect appetizer to enjoy when you're craving something salty and savoury. Make this your new favourite guilty pleasure snack!

INGREDIENTS

1 of Mimi Foods sheeted gluten-free dough
Dairy-free cream cheese
5-6 slices of prosciutto
Dairy-free OR lactose-free mozzarella
1 tbsp garlic powder
1 tbsp dried parsley
1 egg
Vegan parmesan 
               

INSTRUCTIONS

  1. Remove the dough from the freezer and let it defrost for 2-3 hours.
  2. After the dough is defrosted, preheat the oven to 400ºF. 
  3. Lay out the sheeted dough and use a pizza slicer to cut the dough into 5 large strips.
  4. Spread the cream cheese evenly on each strip, then layer your prosciutto. Next add the dairy or lactose-free mozzarella, and then sprinkle some garlic powder and dried parsley on top of the strips.
  5. Fold the strips in half, creating a tube-like shape. Once everything is folded, use a knife to cut the dough into small bite sized pieces.
  6. Add them to a parchment paper lined baking sheet, brush on some egg wash and then sprinkle the bites with some vegan parmesan and some more dried parsley.
  7. Bake them in the oven for 20-25 minutes or until golden brown.
  8. Remove from the oven and serve hot. Enjoy the cheesy goodness!
