INGREDIENT NOTES

  • Gluten-Free Tortilla Wrap: Opt for a high-quality gluten-free tortilla wrap to ensure a soft and pliable texture. Look for brands that specifically label their products as gluten-free to avoid any cross-contamination risks.
  • Hashbrown Patties (Gluten-Free): Use pre-made gluten-free hashbrown patties or make your own. Check the packaging or recipe to ensure they are gluten-free and follow the cooking instructions to achieve a crispy texture. Air frying them at 400ºF for 10 minutes will have them golden and crispy.
  • Eggs: For light and fluffy scrambled eggs, whisk your eggs in a bowl until well beaten. To enhance the texture, add 1 tablespoon of melted vegan butter to the eggs before cooking. The vegan butter will help create a fluffy and light scramble that melts in your mouth.
  • Lactose-Free Gruyere: Any kind of cheese will do. Whether you use cheddar, mozzarella or Gruyere, all will do the job adding that saltiness to your wrap. Dairy-free or vegan cheese can also be substituted as well. 

 

FARMER'S BREAKFAST WRAP

It's a breakfast that not only keeps you full and satisfied but also ignites your taste buds with its cheesy, crispy, and utterly delicious goodness.

INGREDIENTS

  • 1 gluten-free tortilla wrap
  • 2 hashbrown patties
  • 2 eggs
  • 1 tbsp vegan butter
  • Lactose-free Gruyere, sliced
  • 2-3 strips of bacon, cooked 
  • 1 small tomato, sliced
  • Salt and pepper to taste

INSTRUCTIONS

  1. Preheat your oven according to the hash brown package instructions. Bake the hash brown patties until golden and crispy. I used my air fryer and fried them at 400ºF for 10 minutes.
  2. In a separate pan, cook the bacon until crispy. Once done, transfer it to a paper towel-lined plate and let it cool. 
  3. In a small bowl, beat 2 eggs with some melted vegan butter, and season with salt and pepper. The melted vegan butter will make the eggs light and fluffy.
  4. Heat a non-stick pan over medium heat and pour in the beaten egg mixture. Using a spatula or wooden spoon, gently push and fold the cooked edges of the eggs towards the center, allowing the uncooked portion to flow to the edges. Continue this process, moving the eggs around the pan, until they are mostly cooked but still slightly moist. Once cooked but still moist, remove from heat and set aside.
  5. Cut up your slices of lactose-free or vegan cheese and slice up the tomato and set aside for later.
  6. Warm the gluten-free tortilla wrap according to package instructions or in a dry skillet over medium heat for a few seconds on each side to make it pliable.
  7. Place the warm tortilla wrap on a clean surface and start assembling in this order; hash browns, bacon, scrambled eggs, lactose-free cheese, and tomato.
  8. Fold the sides of the tortilla wrap inward, then roll it up tightly from one end to create a wrap.
  9. Lightly toast the wrap on an oiled pan for 2 minutes per side.
  10. Slice the wrap in half, if desired, for easier eating.
  11. Serve this tasty Farmer's Wrap immediately and enjoy!
