These chocolate chip banana squares are not only delicious, but they are also a healthier way to enjoy some tasty treats! I substituted many ingredients to feel less guilty about eating yet another sweet and this is what I came up with. Rather than using brown sugar, I substituted coconut sugar and instead of using regular GF flour, I used oat flour for an extra source of protein. Lastly, every good sweet has a little bit of chocolate and this was a hard one to substitute, but to my surprise the unsweetened chocolate chips were quite tasty with this combination.
Here's what you'll need:
* 5 very ripe bananas
* ¾ cup coconut sugar
* ¼ cup vegan butter, softened
* ¼ cup almond milk
* 2 eggs
* 1 ¾ cup oat flour (or your preference of GF flour)
* 1 tsp baking soda
* 1 tsp vanilla extract
* ½ tsp salt
* 1 tsp cinnamon
* 1 cup unsweetened chocolate chips
Instructions:
~Step 1: Preheat oven to 350 degrees.
~Step 2: Grease a deep rimmed baking sheet with vegan butter or nonstick baking spray.
~Step 3: Mash peeled ripe bananas in a large bowl.
~Step 4: In a separate bowl, add in vegan butter, eggs, and coconut sugar and cream together.
~Step 5: Stir in milk.
~Step 6: Add in vanilla, cinnamon, baking soda, salt, and mix well.
~Step 7: Add in your mashed bananas and mix until combined.
~Step 8:Fold in flour and mix until there are no lumps - but to not overwork.
~Step 9: Add unsweetened chocolate chips in right at the end, mixing through thoroughly.
~Step 10: Pour batter into prepared baking dish, and bake for 25 minutes or until toothpick inserted into the middle comes out clean (you might get melted chocolate on the toothpick, disregard that.) Enjoy!
