These S'mores Cookies are the perfect dessert to end off the summer. Although summer is coming to an end, fall campfires are still to come. You don't need a campfire to enjoy these cookies but they will definitely bring back memories of roasting marshmallows with your family. This time you get to roast your own marshmallows from right inside your kitchen.
These delicious delights are the perfect way to switch up your traditional chocolate chip cookie recipe. This recipe will give you the perfect cookie dough and is incredibly easy to work with. One thing I noticed when including marshmallows in the dough is that if baking for too long, the marshmallows will melt down into a liquid form and will seep out of the actual cookie. It is completely optional to include them in the dough to avoid this, however you absolutely need to add them to the top with some graham cracker crumbs.
Although Summer is coming to an end, S'mores season is not. T'is the season for Fall campfires and marshmallows galore. Before your next campfire, prepare these cookies and set aside to cool. As you're gathered around the fire, make sure you have your S'mores cookies close so that you can add your roasted marshmallows between two cookies. Voila! You have a S'mores cookie sandwich!

Flour: This recipe uses Bob's Red Mill 1:1 Baking flour. You can use regular flour as well, but the gluten-free flour creates a very workable cookie dough.
Butter: This recipe uses softened vegan butter.
Egg: You need one egg. I have not tried recreating it with a flax egg, but when it comes to baking, I've never had any issues or seen too many differences when using a flax egg.
Chocolate Chips: I used vegan semisweet chocolate chips by Enjoy Life Foods. The measurement for chocolate chips is recommended but you are more than welcome to add more depending on your preference.
Mini marshmallows: I added the marshmallows into the cookie dough but after baking for 10 minutes, some of the marshmallows were melted into liquid form and were seeping out of the cookie. If this happens, simply cut off the liquid part that will harden and add the extra marshmallows on top of the cookie. Pop them into the oven on broil for 30 seconds to 1 minute and watch those marshmallows roast.
Graham cracker crumbs: I used the Graham Crackers from Kinnikinnick. They’re really easy to find and are perfect for S’mores.
