White Chocolate Cranberry Gluten-free Oat Squares

Try out these beautifully textured, white chocolate cranberry squares to get you in the mood for holiday baking. I took a bag of WTFlour's gluten-free oat muffin mix and turned it into these festive holiday squares. The key to this recipe is the fresh cranberries that give this dessert that gorgeous pop of colour it deserves. The cranberries mixed with dairy-free white chocolate, surrounded by an oat base will have you wanting to make more!

 

 

INGREDIENT NOTES

  • WTFlour mix: Originally this mix is meant for baking muffins but you can use this flour mix for just about anything. If you can't find this flour mix, any flour mix or combination with sugar, salt, and xantham gum will do the trick. I picked up this mix at winners!
  • Cranberries: Fresh whole cranberries are an absolute must for this recipe. As the oat squares are baking, the cranberries will begin to burst, giving these sweet treats that burst of colour it needs. If you're using dried cranberries it will not reflect the same appearance.
  • Eggs: This recipe is not vegan because it use an egg, however you can make it vegan by substituting 1 mashed banana.

WHITE CHOCOLATE CRANBERRY GLUTEN-FREE OAT SQUARES

INGREDIENTS

1 1/4 cup almond milk 
1 egg
1/3 cup vegetable oil 
1 tsp vanilla extract
1 package WTFlour mix
1/2 cup fresh cranberries
1/2 cup dairy-free white chocolate chips

Instructions

  1. Preheat oven to 350º F and line a brownie pan with parchment paper.
  2. Add 1 egg, almond milk and vegetable oil to a mixer. Mix until fully combined.
  3. Add WTF flour mix to the wet ingredients and mix throughly.
  4. Wash the cranberries and add to the batter with the dairy-free white chocolate chips.
  5. Once everything is combined, pour the batter into the pan and use a spatula to smooth the top. Add some additional cranberries and white chocolate chips and bake in the oven for 25-30 minutes or until golden brown.
  6. Remove from the oven and let it cool for 5-10 minutes. Cut into 9 squares and serve warm. Enjoy!
