This mediterranean couscous bowl is the perfect dinner idea if you're looking for something easy, simple and delicious. It is also a great idea for meal prep as well. This bowl is packed with flavour, protein and uses very simple ingredients that you'd easily have in your fridge and pantry!
This is my first time trying couscous and it was so delicious. I love mediterranean style bowls and salads so it was only right to try it out with couscous. This brand is called 'Pastore' and is 100% natural couscous as well as is imported straight from Italy. I picked up this deliciously seasoned vegetable couscous from Mimi Foods, where they have a variety of gluten-free products such as pastas, pizza doughs, frozen foods and different gluten-free grains to stock up your pantry.
NOTES
- I added leftover chicken cutlets to my bowl but you are more than welcome to use regular grilled chicken as well.
- Feel free to build on the mediterranean theme and add some vegan feta cheese as well to give your bowl that little bit of saltiness it needs.
- The measurements for the ingredients below are meant to give your 3-4 servings, so you can make dinner for the family or take your leftovers with you to work!
- You can double or triple the dressing measurements if you like more dressing in your bowls. It's very easy to make and take less than a minute to put together.
- Make this bowl vegan by removing the chicken and adding your favourite source of protein!
MEDITERRANEAN COUSCOUS BOWL
This balanced and delicious bowl is filled with flavour and is the perfect dinner idea if you're short on time. In less than 30 minutes, you can prep this delicious gluten and dairy-free meal using simple and colourful ingredients.

INGREDIENTS
1 yellow bell peppers, chopped
1/2 cup kalamata olives, chopped
1 can of chickpeas, rinsed
1 medium tomato, chopped
1 medium red onion, chopped
2 tbsp olive oil
2 tbsp honey mustard
2 tsp red wine vinegar
INSTRUCTIONS
- Start prepping by chopping up and washing all your toppings that you'll be adding to your bowl. Set everything aside for later.
- Add 400 ml of water to a medium pot and place on the stove. Add 4 tbsp of olive oil and some salt to the pot and let it boil. Once the water comes to a boil, add in the couscous and mix it in with the water. Let it cook for 8 minutes and use a fork to move it around and keep it fluffy.
- Wash your chicken breast and remove any fat with a knife. Grab some plastic wrap, place it on top of the chicken and use a meat hammer to tenderize the chicken. After the chicken has been tenderized, season with your spices, drizzle the olive oil and thoroughly rub it in to the chicken. Place a pan on the stove at medium heat, add 1 tablespoon of olive oil and add the chicken to the pan. Cook on each side for 6-7 minutes.
- While both the couscous and chicken are cooking, make the dressing by adding olive oil, honey mustard, red wine vinegar, dried basil, garlic powder, and salt to a tupperware, secure the lid and give it a good shake. Taste test it to see if you need to add any extra spices.
- Once everything is cooked, grab your bowl and start putting everything together. Drizzle your dressing on top, give everything a good mix and enjoy!
