Almond & Hazelnut Panettone Bake

If there's one thing that my family and I always get a lot of around the holidays, it's panettone. With the amount that we receive, it's nearly impossible to enjoy it all at a reasonable pace without it getting stale. This recipe is the perfect way to switch up the way you enjoy this sweet bread and can be enjoyed at any time of the day! This version of panettone is a combination of two sweets I very much enjoy; french toast and almond croissants.

It uses the batter from a french toast recipe and the almond/hazelnut paste from an almond croissant. Put the two together and you have this delicious sweet bread bake! This recipe is 100% gluten-free, however the panettone itself is not dairy-free but is instead lactose-free. Excluding the panettone, the other ingredients are entirely dairy-free. I have yet to find a 100% dairy-free panettone, but if you do then this recipe is perfect for you!

INGREDIENT NOTES

  • Panettone: Gluten-free panettone is not as hard to find as you may think. I purchased this gluten and lactose-free panettone from a bakery in Woodbridge called Schiroso Gluten Free Foods. There are also other brands like Schar Gluten Free that offer panettone as well! 
  • Hazelnut extract: This panettone is topped off with hazelnut sugar so what better way to enhance that taste than by creating a hazelnut paste to add to the soaked panettone.  

 

ALMOND & HAZELNUT PANETTONE BAKE

This panettone bake is a fun and tasty way to take that old and stale panettone and turn it into something beautiful and delicious. Once you try this recipe, you'll never let that old panettone go to waste ever again!

 Prep Time:  20 min    Bake Time: 25 min    Total Time: 45 min 

HAZELNUT PASTE INGREDIENTS

1/4 cup Becel vegan plant-based butter
1/4 cup granulated sugar
2 tsp hazelnut extract
1/2 cup almond flour
1 egg
Pinch of salt

BATTER INGREDIENTS

3/4 cup almond milk
1/4 cup Silk's dairy-free whipping cream
1/4 cup granulated sugar
1 tsp vanilla extract
1/2 tsp salt
2 eggs

OTHER INGREDIENTS

Gluten & Dairy-free (lactose-free) panettone
Icing sugar, to top
Dairy-free chocolate syrup, to drizzle

             

INSTRUCTIONS

  1. Preheat the oven to 350ºF.
  2. Combine the hazelnut paste ingredients in a small mixing bowl.
  3. Slice your panettone and set aside for later.
  4. In an oven safe dish, add your batter ingredients and whisk together well. Then dip each side of the panettone in the egg and milk mixture and arrange them in the dish.
  5. Use a spatula to spread the hazelnut paste on top of the soaked panettone and then top it off with sliced almonds.
  6. Cover the dish with aluminum foil and bake in the oven for 15 minutes covered and 10 minutes uncovered until golden brown.
  7. Remove from the oven and sprinkle powdered sugar on top. Drizzle some dairy-free chocolate sauce on top and serve warm.
