These deep-fried doughnut bites are the perfect combination of fluffy on the inside and sweet on the outside. Who doesn't love fried dough let alone covered in coconut sugar which makes it so much sweeter. This quick and easy recipe will remind you that some of the sweetest things are also the simplest and this is as simple as it gets.
These fried doughnut bites are my version of the Portuguese doughnuts my grandmother would make for me as a kid. She would make them much, much bigger and not so much in a ball form but they were always so delicious and one of my favourite treats to have. This is my version but made much smaller and fried quicker. This recipe only requires two ingredients; Mimi Food's gluten-free dough balls and coconut sugar. You may use some extra flour to help mold the balls but it is not required. Try it out for yourself and have it become your new favourite treat.
NOTES
- Sugar: Any kind of sugar will do to coat the dough bites but we decided to try coconut sugar this time. You are welcome to substitute white granulated sugar as well. Adding cinnamon to the sugar can also help take it to the next level.
COCONUT SUGAR DOUGHNUT BITES
This 2 ingredient dessert is the easiest and quickest treat to make that everyone will enjoy. Who doesn't love fried dough rolled in sugar? Give it a try and see how something so easy and small can become your new favourite.
Prep Time: 10 min Cook Time: 10 min Total Time: 20 min
INGREDIENTS
1/2 cup coconut sugar
Vegetable oil or canola oil
Bob's Red Mill gluten-free flour
Instructions
- Remove the Mimi Foods dough from the freezer and let it thaw for 4-5 hours.
- After the dough is defrosted, add enough vegetable oil in a pot until it reaches about half way.
- Roll out the Mimi Foods dough and sprinkle a little flour on top. Once it's rolled out, use a pizza roller and cut 3 vertical lines and 4 horizontal lines.
- Take each square and roll in a ball and set aside.
- The oil should be hot and ready to go by this point. Gently place each ball in the hot oil and let them fry from 2-3 minutes each. The dough balls will rise to the top of the oil and will turn over by themselves once they're done frying on each side. Remove the dough balls when they're golden brown.
- Be careful when removing them. I use a hand strainer that is similar to a spoon but has many holes in it to separate the oil from the dough ball. This is the kind of tool that you might find in your kitchen and would be very useful in this situation.
- Once removed, roll them in coconut sugar and set aside.
- Enjoy that fried doughy goodness.
