Sprinkle Sugar Cookies

NOTES

  • Once the cookies are finished baking and you remove them from the oven, they will still feel fairly soft and you might think they aren't ready. I promise you they are. Once you let the cookies cool for about 5 minutes, you're giving them the opportunity to set and harden. This will give you the perfect golden and chewy cookie.
  • When it comes to choosing sprinkles, any kind will do. I chose to use red, green and white sprinkles to be festive and participate in the holiday season. This recipe is not just good for the holidays but can be used throughout any time of the year. Your choice of sprinkles can reflect the occasion with the colours you use.

 

SPRINKLE SUGAR COOKIES

This sugar cookie recipe is perfect for the holidays. This cookie is dangerously delicious and is perfect if you're looking for an authentic sugar cookie. They're 100% gluten, dairy free and nut-free.

INGREDIENTS

3/4 cup Becel plant-based salted butter
1 1/2 cups granulated sugar
1 tbsp vanilla extract
1 egg
2 tsp corn starch
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
2 cups Bob's Red Mill 1:1 gluten-free flour
1/2 cup sprinkles

INSTRUCTIONS

  1. Preheat the oven to 350 degrees.
  2. Using a stand mixer, beat vegan butter and sugar on medium speed until light and fluffy, for about 5 minutes. Add in vanilla and the egg and mix until combined.
  3. Add in the corn starch, baking soda, baking powder, salt, and gluten-free flour until everything is incorporated. Add in the sprinkles and mix on low until the sprinkles are incorporated throughout the cookie dough.
  4. Line two baking sheets with parchment paper. Using a medium sized cookie dough scoop or spoon, scoop about 2 tablespoons of dough onto a baking. 
  5. Bake for 9-11 minutes, or until the edges of the cookie are just set. They may seem underdone but they will be perfect! They will still be soft once you remove them from the oven so you'll need to let them set and harden a bit for about 5 minutes. Enjoy with a glass of your favourite plant-based milk.
